Try the Selva Special
at Cafe Melba

Cafe Melba in Takapuna is a favourite haunt for many. Their great coffee, great food, a great team and Barrista Sean does the best coffee art in Auckland.
One local who loves Cafe Melba is Get Fit Fast and Les Mills Takapuna Personal Trainer Selva Thankamani. Selva has been frequenting the cafe for three years with wife Nancy. Cafe Melba owner Bobby Zhuo and his friendly team have become so used to Selva’s special food combination requests, based around specific nutrition, that they started calling them their ‘Selva Special’.
During March they took the whole concept one step further by engaging Selva and Nancy to produce a specific menu. This menu is based around the nutritional requirements of those involved in fitness.
“The concept is all about eating clean and keeping the metabolism moving,” explains Selva Thankamani. “The meals are high in protein, low in carbs, contain what we call good fats and are also full of natural greens. They will be good for everyone.”
Three of the seven items are called ‘Get Fit Fast Specials’. These are a White Omelette, a Chicken Omelette and a Vital Greens Smoothie. Another three are in a section called ‘Selva’s 3 Power Meals’. These are Selva’s Salmon Special (scrambled eggs, salmon, bacon, avocado, tomato, spinach, cashew nuts); Selva’s Steak Special (grilled sirloin steak with nuts, avocado, spinach, coconut oil); Selva’s Chicken Special (grilled chicken strips, Greek salad, kumara and a side of Nancy’s kumara sauce). The final offering is called the ‘Kiddie Special’. But the wild berry Weet-bix bites with coconut milk and blueberries are proving to be very popular with the ladies as well as the kiddies!

We love contributions to Channel Magazine from our ‘locals’. One such local is Stuart Wright, the friendly host at Sumo Salad in Takapuna. Stuart has put his hand up to provide a monthly contribution – to inform our readers of how to make tasty and healthy salads, and other bits and pieces. This is his tasty delight for March, actually provided by his new staff member Anya.

This month we are celebrating our new member of staff’s arrival. Sumo Salad is more than happy to introduce Anya. Originally from Russia, Anya has been making great coffee at La Tropezienne for the last two years and we look forward to bringing her experience with Atomic Coffee to Sumo Salad.
Salat Olivier is always on Russian dinner tables at any celebration and Anya kindly offered to make it for us. It was so tasty I just had to share it. It is so easy to make so go for it.  When you next pop into Sumo tell Anya how great it was. Eat Well!!

Ingredients

300g of diced cooked chicken
2 Potatoes
3 carrots
¼ cup chopped red onion
1 cucumber deseeded and chopped
½ cup of peas

2 hard boiled eggs
4 sprigs of fresh dill
6 sprigs of Italian Parsley
2Tbs of white wine vinegar
Salt and Pepper to taste
½ cup of Mayonnaise
(either buy a good one
or make youself)


Method
Place potatoes and carrots in a medium saucepan and cover with cold water. Gently boil over a medium heat until tender. Drain and let cool completely. Now peel the potato and carrot and 1cm dice. Transfer into large bowl and add remaining ingredients and stir till combined. Season to taste cover and refrigerate.
Mayonnaise
Place 3 egg yolks, tsp of Dijon Mustard in a food processor. Turn on the food processor and slowly add 1 ¼ cups of flavourless oil. Turn off and add salt and pepper to taste and squeeze the juice of a lemon into the mayo. Give a quick burst and refrigerate.
